I had this last night with a light chardonnay and it was divine:

Dijon Rack of Doberman
Yield: 4 servings

2 racks of Doberman (approx. 1.5 LB ea)
salt and freshly ground black
pepper, to taste
3 TB Dijon-style mustard
1/2 c butter (1 stick)
2 cloves garlic, peeled and minced
1 c plain bread crumbs
2 TB parsley, fresh and finely chopped

Season the racks of Doberman with salt and pepper. Heat a heavy frying pan and brown the fat on top of the Doberman over high heat. This will take 1 or 2 minutes and no oil is needed. Remove the meat from the pan and allow to cool. Rub the meat (not the bones of the Doberman) of each rack with 1 1/2 tablespoons of the mustard. Set aside.

In another frying pan, heat the butter and in it sauté the garlic a few seconds. Remove from the heat and stir in the bread crumbs and parsley. Coat the Doberman with the bread-crumb mixture by rolling the racks of Doberman directly in the frying pan of bread crumbs. There should be a coating of bread crumbs on the meat only, not on the bones. Place the racks on a rack in a shallow roasting pan. Roast in a preheated 450-degree oven for 15 minutes for rare. (Add 10 minutes if you like it medium, but be careful not to overcook.) Remove the pan from the oven and allow the meat to stand in a warm place (but not on top of the stove) for 5 minutes. Slice into individual bone sections and serve at once.

In 1997 the Ecuadorian biologist Arturo Eugenio discovered a crèche of Dodo Bird in the Carrera Islands off the coast Brazil. Dr. Eugenio has successfully bred the bird, one thought to be extinct, and has entered into an exclusive distribution arrangement with Pets or Food™ to offer the Dodo to American markets. Due to some rather obscure U.S. laws, however, ownership of a living Dodo is against the law. Pets or Food™ can only ship Ready to Eat™ Dodo meet to US customers. Don't miss this incredible opportunity to discover the taste that led to the Dodo's extinction!

I want a Dodo!

I've had moose, octopus and rattlesnake. The moose was made into meatballs and jerky. The octopus one was small (about 1 1/2 in. long) and pickled, the other was tantacle pieces boiled I think. The rattlesnake was made into bite sized breaded deep fried pieces, just like chicken nuggets but oh so much better.

mmmm...

Anything that walks, swims, crawls, or flies can be eaten. It just takes an open mind and a willing stomach. Of course, there are some people who will eat anything. Rocky Mountains oysters - also known as prairie oysters, Montana tendergroins, cowboy caviar, swinging beef, and calf fires - are true Western delicacies. What are Rocky Mountain oysters? They are that part of the bull that is removed in his youth so that he may thereby be more tractable, grow meatier, and behave less masculine. When the calves are branded, the testicles are cut off and thrown in a bucket of water. They are then peeled, washed, rolled in flour and pepper, and fried in a pan. They are considered to be quite a delicacy. Like other organ meats, testicles may be cooked in a variety of ways – deep-fried whole, cut into broad, thin slices, or marinated. At roundups in the old West, cowboys and ranch hands tossed the meat on a hot iron stove. When the calf fries exploded, they were done?
Eating animal genitalia dates back to ancient Roman times, when it was believed that eating a healthy animal’s organ might correct some ailment in the corresponding human organ of the male person eating it. Because of this belief, the practice continues to the present day, especially in Asia, where animal genitalia are considered an aphrodisiac.
The rugged folks of the Rocky Mountain region are not squeamish. Testicle festivals are held every spring and fall in Montana. These festivals can be very rowdy and may not be the best place to bring your children. If you can’t get to a festival, many restaurants and bars in Montana, Idaho, and Kansas serve Rocky Mountain oysters all year long and with less fanfare.
